How’s your Stampede going? I’m writing this feeling very tired, which means Stampede has been very good thus far.
My friend Kelly was in town last weekend. Here we are at the Scott Land Stomp party at Wildhorse, my favourite Stampede tent.
And here’s what Kelly made me for breakfast while she was in town: delicious, healthy pancakes. They are a lovely alternative to the regular Stampede flapjacks you’ll come across this week. To make them, blend the following ingredients in a blender, cook the pancakes in a bit of butter and serve them with a pinch of cinnamon:
- 1 ripe banana
- 1 heaping tbsp almond butter (or any nut butter)
- 1 egg
