A Healthy Pancake Breakfast

How’s your Stampede going? I’m writing this feeling very tired, which means Stampede has been very good thus far.

My friend Kelly was in town last weekend. Here we are at the Scott Land Stomp party at Wildhorse, my favourite Stampede tent.

And here’s what Kelly made me for breakfast while she was in town: delicious, healthy pancakes. They are a lovely alternative to the regular Stampede flapjacks you’ll come across this week. To make them, blend the following ingredients in a blender, cook the pancakes in a bit of butter and serve them with a pinch of cinnamon:

  • 1 ripe banana
  • 1 heaping tbsp almond butter (or any nut butter)
  • 1 egg
That would serve one. For two hungry people, I’d triple it so that you have enough to stuff yourselves and to snack on later. That’s it and that’s all. Giddyup.

  1. Yum! This is a great post-workout/run snack. I make these with two eggs and lots of cinnamon in the batter. (And I cook them in a generous helping of butter, or coconut oil.) An even healthier option is to replace the banana with the flesh from a roasted yam. Trust me, it’s delicious.
